Burrito with salsa and peppers

Burritos are such a great way to enjoy all sorts of delicious ingredients; spicy, savoury, hot or cold. Armed with a packet of flour tortillas, all you have to do is choose your filling, wrap or roll it up – and you’re ready to eat.

Here are three interesting fillings to pack in your burrito.

Black Bean Burritos

Pack your burrito with black beans, red pepper, onion, spicy jalapenos, cream cheese, and coriander – what a great combo!

Makes 2 Servings


  • 2 medium tortillas
  • 2tbsp vegetable oil
  • ½ red pepper diced
  • small red onion diced
  • 1 tsp finely chopped garlic
  • 1 tsp finely chopped jalapenos
  • 400g tin black beans
  • 85g cream cheese
  • 2 tbsp copped coriander
  • Salt to taste



  • Wrap tortillas in foil and place in oven until heated through – about 15 minutes at 180C/Gas 4.
  • In a large frying pan fry onions, garlic, red pepper, and jalapenos over medium heat for two minutes
  • Add the beans and fry for another 3 minutes, stirring occasionally.
  • Add cream cheese, stir until soft and combined, and then add the coriander.
  • Now spoon mixture into warm tortillas roll up – serve these straight away.


Spicy Chicken

Chicken and a spicy salsa burritos are a treat for the taste buds. Use grated cheese, avocado and sour cream to add even more layers of flavour.

Makes 4 Servings


  • 8 medium tortillas
  • 2 chicken breast fillets
  • 4tbsp salsa
  • 115g passata
  • 1 packet taco seasoning mix (35g)
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 2 cloves of finely chopped garlic
  • Hot sauce of choice.



  • Warm the tortillas in the oven by wrapping them in foil and leaving them to heat for 15 minutes at 180c/Gas Mark 4.
  • Put the chicken breasts and passata in a pan and simmer over medium heat.
  • Add salsa, garlic, cumin, chilli powder and seasoning and allow to cook for 15 minutes over a gentle heat.
  • When the chicken is tender, start pulling it apart with a fork and continue to cook, adding water if the mixture reduces too much.
  • Add Tabasco or other hot sauce to taste.
  • Allow to cool slightly before adding filling to tortillas and serving.



These burritos are perfect for a fun family meal any night of the week. The grated cheese melted on top is an optional, but delicious topping.

Makes 4 Servings


  • 8 medium tortillas
  • 50ml vegetable oil
  • 500g minced beef
  • 400g can of chopped tomatoes
  • 200g can of kidney beans in water
  • 1 diced red onion
  • 2 cloves of crushed garlic
  • 200ml of beef stock
  • 1 tsp cumin
  • 1 tsp powder paprika
  • 1 tsp cayenne pepper
  • 100g grated medium strength cheese
  • 1 sliced jalapeno pepper



  • Fry onions and garlic in oil over medium heat for 5 minutes, add beef and cook until browned.
  • Add cayenne pepper, paprika and cumin to browned meat and stir in tin of tomatoes, drained kidney beans and the beef stock. Allow to simmer for about 20 minutes or until reduced.
  • Heat your grill to maximum, add a generous mound of the beef into tortillas and roll to create your burritos.
  • Now top with grated cheese and put under the grill until melted.
  • Remove the burritos and top with sliced jalapeno to serve.
